- As you might imagine, the fall bulb season is a rather hectic time of the year. That's when I count on the stockpile of magical envelopes in our freezer containing all the goodness of this year's harvest. My gremolata concoction is one of my new favorites. It is terrific melted over steamed or roasted vegetables, spread over a salmon filet (cook at 250ºF for 30 minutes), or rubbed under the skin of a roasting chicken. It's a terrific, easy way to harvest and preserve parsley for use over the winter when we need it most.

I love to make recipe basics in advance and freeze them for use later. I always have freezer bags of my lemon chicken on hand, as well as oven-baked eggplant. It makes delicious and healthy dinners a snap on work nights, particularly during the bulb season when easy, quick comfort food is such a saving grace. -

One of our favorite restaurants in Maine is The Burning Tree, quietly nested in Otter Creek just south of bustling Bar Harbor. Owners Allison Martin and Elmer Beal specialize in delicious fresh seafood creatively prepared (like crab au gratin and fresh fillet of flounder dusted with ground sage and almonds in a heavenly cream sauce), and vegetables from their own organic garden.
