Chicken roulades of all sorts have been a passion of mine. They're a great way to use sautéed vegetables of all kinds. I like to sauté different combinations of vegetables in advance and freeze them in 2 cup portions. Then, when I want to make chicken roulades on a work night, I just pop a bag out of the freezer. Herbs may be either direct-sown outdoors after the threat of frost has passed, or started indoors for transplanting or container gardening. Herbs require moderately rich, well-draining soil with at least 5 hours of bright sunlight. To start indoors: sow lightly in sterilized seed mix, lightly moisten and cover with plastic wrap until germination takes place. Do not water again until sprouts emerge. Remove plastic wrap once sprouted. Transplant outdoors when the threat of frost has passed. Some perennials like Lavender, Catnip or Savory prefer to be started indoors. Others such as Chives, Sage or Fennel prefer to be direct-sown outside once the soil has warmed. Most herbs dislike chemicals or over-fertilization. Tomatillos are best started indoors: sow thinly in flats or small pots in seed starter mix, 6 weeks before the danger of frost has passed. Provide good ventilation. Keep the soil evenly moist but not wet. Tomatillo transplants need full sunlight to keep from getting leggy. Move single seedlings to 4" pots. Two weeks after the danger of frost has passed, gradually harden off seedlings outdoors and plant in full sunlight in average soil. Avoid over fertilization as the plants will produce leaves rather than fruit. Feed lightly as needed with fish emulsion or manure tea. Tomatillos grow into large, sprawling bushes; if space is an issue, use tomato cages or stakes. Harvest as the fruit inside the husk turns golden-beige and easily separates from the stem. Store in a cool, dry place with the husks intact until ready to use or up to one month. -

Some Tomatoes are glamorous like Elizabeth Taylor--lush, perfect, refined. Brandywines are glamorous like Melina Mercouri or Anna Magnani. Though their flavor is extraordinary, they do not always form perfect circles when sliced. Sometimes the fruits are lumpy, contorted, or deeply cleft, and you end up cutting them into free form chunks. They are perfect tossed with bread in an Italian panzanella salad, where flavor is more important than form. Or in salsa. Or in sandwiches with lots of mayo. Or try this one: toss some chunks of brie in hot, drained pasta, then add oddly shaped pieces of Brandywine Tomatoes. Ah, summer.
