Ping Tung (Long) Asian Eggplant

75-90 days. These attractive, slender rosy-mauve fruits grow on foot high, disease-resistant plants. Ping Tung is named for its native town in Taiwan. Harvest at 8" to 10", when it is perfect for stir-fries and heavenly in Thai-style red curry. You'll need red curry paste (available at Asian groceries or gourmet markets), a few perfect Ping Tung, a can of coconut milk, boneless chicken and Cilantro to garnish. Don't use a lot of curry paste unless you like it HOT. Serve atop fragrant jasmine rice. (OP.)

  • Eggplant has been cultivated in southeastern Asia since time immemorial. A member of the Nightshade family of the species Solanum melongena, it is also commonly known as Aubergine. Tropical, heat-loving Eggplant is best grown as transplants. To speed germination, soak seeds in warm water for one hour before sowing. Sow 8 to 10 weeks before setting out, after all threat of frost has passed and nighttime temperatures are reliably above 55°F. Use lightweight floating row covers to keep them extra warm and cozy if necessary. Eggplant is a heavy feeder and should be grown in organically rich soil. Harvest when the skin is thin and shiny, using a sharp blade. One of the most widely used vegetables in global cuisines, Eggplant is low in fat and carbohydrates.
