Tuscan Spinach with Raisins


  • Spinach
  • Handful of raisins
  • Olive oil
  • Toasted pine nuts
  • Salt to taste


Rinse the Spinach leaves and pat dry. Pre-soak a handful of raisins in boiling water for 30 minutes. Steam the Spinach for one minute. Drain the Spinach and raisins and sauté together in three tablespoons of olive oil in a large, heavy skillet for three minutes. Season with salt and sprinkle with lightly toasted pine nuts.
