Warm Bacon Dressing

This dressing is good with firm, cool-weather greens such as spinach, radicchio, endive or escarole. They can withstand a bit of warmth without wilting and the sweetness of the dressing takes the edge off any slight bitterness, for those who don't love that chicory tang.

Warm Bacon Dressing
  • 2 strips of bacon
  • 2 tablespoons of olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon dry mustard
  • Fry two strips of bacon until lightly browned, break it into small pieces and set aside. Pour off all but a tablespoon of grease and, while the pan is still warm, add olive oil, balsamic vinegar, honey and dry mustard. Swirl vigorously in the pan with a spatula. then pour over your salad. Toss, add salt to taste if needed, and serve immediately.
