Kristy’s Garlic Blue Cheese Dip


  • 2 or 3 cloves Garlic, minced
  • 1/2 pound cream cheese at room temperature
  • 2 cups sour cream
  • 2 cups crumbled blue cheese
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • Fine sea salt to taste
  • Ground white pepper to taste
  • 1/4 cup diced Red Bell Pepper (make sure it is dry)
  • 1/8 cup minced Scallions
  • Minced fresh Parsley


In a food processor, pulse to combine the minced Garlic, cream cheese, sour cream, blue cheese, lemon zest and lemon juice. Once combined, puree briefly until smooth. Add salt and pepper to taste; pulse to combine. Put the blue cheese dip in a bowl. Stir in the diced Red Bell Pepper and minced Parsley. Chill before serving. Serve with vegetable crudités and pita chips or use as a special sandwich spread.
