Kennebec is a wonderful all-purpose, high-yield Potato with great disease resistance, and it's widely adaptable, but it's most famous for its thin, pale skin and dense, smooth, low-moisture, white flesh that lends itself perfectly to frying. In fact, it was introduced by the USDA in the 1940s specifically for that purpose (both chips and fries), but modern gardeners know that it has a classic Potato taste and that it can be used for almost any purpose.
