90-120 days. A terrific introduction from Louisiana State University, Beauregard has large, elongated tubers with thin, red-orange skins and deep orange-colored flesh with a moist, light and creamy texture. More disease resistant that most varieties, Beauregard is a widely-adaptable and high-yielding variety, even in the North.
