  • Tropaeolum majus. Prized for their sweet-spicy flavor, these dwarf, mounding heirlooms are among the most widely grown of all edible flowers. With a bit of a peppery tang, Nasturium blossoms are often added to salads as a zesty garnish over a citrus vinaigrette. A sprinkling of colorful Nasturtium blossoms lends the perfect finishing touch to cold Cucumber soup, fresh pineapple sorbet or an islandy mango mousse. We adore the deep blue-green foliage of Nasturtiums almost as much as their flowers. We use the leaves as doilies under cheese platters, cakes and individual soup tureens in which the flowers float. Make sure to inspect Nasturtium leaves after a rain: the water collects like sparkling diamonds. Easy to grow in full to filtered sunlight, this beloved annual may be direct-sown last spring frost date, or started indoors as a transplant five weeks prior to the last frost date. It flowers best with cooler nights. Mounding/Bush varieties are great for borders and Climbing/Trailing varieties are good for window boxes, hanging baskets and trellises. Deer resistant. Annual. Summer to early fall flowering.
